SPICY SHRIMP RAMEN BOWLS




As a kid I don’t ever remember having Ramen noodles, I think I first had them after I got married.  They were just ok for me, but my kids always loved it. Making it with the fresh veggies and shrimp turns it into yummy noodle goodness. You will never go back to the plain Ramen with just the seasoning packet after you try this.

The fresh veggies and tender shrimp gives boring old Ramen a burst of flavor and is amazingly delicious! I use my Cast Iron Dutch Oven for this recipe and serve it in these ramen bowls my kids love!

INGREDIENTS

  • 3 pkgs ramen (seasoning packet discarded)
  • 1½ lbs med-large shrimp peeled and deveined
  • 6 cups chicken, vegetable or seafood stock
  • 2 tablespoons olive oil
  • 1-2 tablespoons sriracha (depending on your heat level)
  • 3 tablespoons soy sauce
  • 3 cloves garlic minced
  • 1 teaspoon grated fresh ginger
  • 1½ tablespoons brown sugar
  • 1-2 cups shredded green cabbage
  • ¾ cup carrots diced
  • ¾ cup sweet peppers diced
  • ½ cup onion diced
  • juice of 1 lime
  • Cilantro


INSTRUCTIONS

  1. In a skillet on medium heat add 1 tablespoon olive oil. Add shrimp, season with salt and pepper and cook for 1-2 minutes on each side or until firm and pink. Set aside

GREEK CHICKEN TRAYBAKE




As demanding as this sounds, this Greek chicken traybake ticks all those boxes and more. It’s packed with beautiful healthy ingredients including red and yellow peppers, cherry tomatoes, red onions, wedges of lemon and loads of garlic and basil. Following less then 10 minutes of prep, everything is tossed in a Greek herb sauce and then baked in the oven for 30 minutes, so simple!

I used large chicken breast which I cut in half, but boneless skinless chicken thighs would also work well. This recipe is incredibly versatile, if you are on the paleo or whole30 diet simply skip the feta, and if you aren’t a fan of chicken then swap it for white fish.

Ingredients

  • 1 red pepper cut into 2 inch pieces
  • 1 yellow pepper cut into 2 inch pieces
  • 1 red onion cut into eighths
  • 2 cups cherry tomatoes
  • 1 lemon
  • 2 large chicken breasts, cut in half or 4 chicken thighs
  • 2 cloves garlic crushed
  • 1/4 cup olive oil
  • 1 1/2 tbsp balsamic vinegar
  • 1/2 tsp smoked paprika
  • 1 tsp thyme
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp chopped fresh basil
  • 2/3 cup black olives
  • 1/4 cup chopped feta (omit for Paleo/Whole30)


Instructions

  1. Preheat the oven to 200 degrees Celsius (390 degrees Fahrenheit)

Vegan Meatless Spaghetti

Healthy Recipes - This meatless spaghetti sauce is already vegan, or you can add cheese if you are not vegan.


You’ll Need:


  • 16 oz sliced baby bella mushrooms
  • 1 medium onion, diced
  • 1/3 cup minced garlic (around 15 cloves)
  • 8 oz portobello mushrooms, diced
  • 1 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 2 teaspoons oregano
  • 1 tablespoon olive oil
  • 25 oz pasta sauce
  • 1 lb spaghetti

The Best Pineapple Pico de Gallo

Quick & Easy Mushroom Linguine

You’ll Need:


  • 160 g (5.5oz) linguine
  • 25 g (2tbsp) butter
  • 250 g (9oz) chestnut mushrooms sliced

Vegan Scalloped Potatoes

POACHED SALMON IN COCONUT LIME SAUCE




Sure, it doesn’t have quite the same depth of flavour – but it requires a fraction of the time and ingredients. I think even those with sophisticated South East Asian palettes will still be mighty impressed with the flavour of we manage to get in this so quickly and with so few ingredients!

The one thing that some supermarkets may not carry is Chilli Garlic Sauce which, as the name suggests, is a spicy garlicky paste. But don’t worry if you can’t find it – just sub with any chilli paste, even if it’s not Asian, OR use a chilli sauce like Sriracha.

Ingredients

  • 4 salmon fillets , 180g/6oz each preferably skinless (Note 1)
  • Salt and pepper
  • 2 tbsp oil , separated
  • 2 garlic cloves , finely grated
  • 2 tsp ginger , finely grated
  • 1 lemongrass , peeled, finely grated (Note 2)
  • 1 tbsp brown sugar
  • 1 tsp chilli garlic paste or other chilli paste, adjust to taste (Note 3)
  • 400 g/14oz coconut milk (Note 2)
  • 1 tbsp fish sauce (or soy sauce)
  • 2 tsp lime zest (1 lime)
  • Lime juice , to taste

Garnish/serving:
  • Fresh coriander/cilantro leaves , finely chopped (recommended)
  • Finely sliced large red chillies (optional)
  • Vermicelli noodles , soaked per packet, or rice
  • Steamed Asian greens


Instructions

  1. Sprinkle both sides of salmon with salt and pepper.
  2. Heat 1 tbsp oil in a non stick pan or well seasoned skillet over medium high heat. Add salmon, skin side up, and sear for just 1 1/2 minutes until golden. Turn salmon and cook the other side just for 1 minute, then remove onto a plate (should still be raw inside).

Sausage rolls with caramelised red onions




Ingredients

For the puff pastry
  • 125g/4½oz plain flour, plus extra for dusting
  • 125g/4½oz strong white flour
  • ½ tsp salt
  • 225g/8oz salted butter
  • 1 free-range egg, beaten, for brushing
  • 2–3 tbsp sesame seeds, to decorate

For the caramelised red onions
  • 1 medium red onion, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp cranberry sauce
  • 1 tbsp balsalmic vinegar
  • pinch salt

For the sausagemeat filling
  • 1 x 450g/1lb sausagemeat
  • ½ tsp nutmeg
  • 1 red onion, finely grated
  • 2 garlic cloves
  • 2 tsp finely chopped fresh thyme
  • 1 small braeburn apple, grated
  • 1 chicken stock cube
  • salt
  • freshly ground black pepper

Method

  1. To make the pastry, place the flours in a mixing bowl with the salt. Make a well in the middle and pour in 150ml/5fl oz water. Stir to combine, knead for a minute, wrap in cling film and place in the fridge for 30 minutes.

Baked Denver Omelet Breakfast Casserole

Stir fry the mushrooms on high heat for 3-4 minutes and add both varieties of bell peppers. Stir fry again for 2-3 minutes and add the onions. Cook everything together on high heat for another two minutes. Season with salt and pepper and turn off the flame. Add the ham and mix well.

Vegan Thai Green Sweet Potato Curry

Healthy Recipes - A Vegan Thai Green Sweet Potato Curry is bursting with creamy sauce, amazing flavor that is perfectly balanced and topped with incredible roasted asparagus! This dish is dairy-free, gluten-free, oil-free and just 8 ingredients!


You’ll Need:


  • 1 large bunch (486g) fresh asparagus, with about 2 inches cutoff from the ends
  • 1 1/2 inch knob (12g) minced fresh ginger
  • 4 cups (520g) peeled and chopped sweet potatoes into 1/2 inch pieces
  • One 13.6oz can of full-fat coconut milk (I recommend the Thai kitchen brand, it's creamy and no other compares)
  • 4 tablespoons (60g) green curry paste (I used and recommend Thai Kitchen brand, I cannot vouch for the flavor or spiciness of any other brand)
  • 1/2 tablespoon (5g) coconut sugar
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon fine sea salt
  • 1 tablespoon (15g) fresh lime juice (and extra for the asparagus)
  • optional garnish: roasted cashews and cilantro
  • optional: I like to serve this with white rice (listed below how to make) or it's delicious on it's own as well like a soup.

Instructions:


  1. If serving with rice, start making that first. Add 1 1/2 cups (300g) jasmine white rice to a medium pot with 2 1/4 cups (540g) water and 1/2 teaspoon fine sea salt. Stir and bring to a boil, once boiling, cover and reduce to low and simmer about 15 minutes until all the water is gone. Remove from the heat and return the lid and cover for just 5 minutes and then remove and fluff with a fork and keep uncovered until ready to serve.
  2. Preheat the oven to 425°F and line a sheet pan with parchment paper. Set aside.

Vegan Bourguignon with Celeriac Mash

  • 10 g / 0.5 oz dried porcini (or other dried) mushrooms
  • 2 tbsp / 30 ml olive oil
  • 1 onion, finely diced

  • 2 celery stalks, cut into chunks
  • 2 carrots, cut into chunks
  • 1 vegan stock cube
  • 1 cup / 240 ml vegan red wine
  • 1 rosemary spring
  • 3 fresh thyme springs
  • 2 fresh or dried bay leaves
  • 2 tsp liquid smoke (optional)

  • 4 tsp cornstarch / cornflour, to thicken

CELERIAC MASH

  • 700 g / 24 oz celeriac, peeled and cubed
  • 2 tbsp shiro / white miso paste
  • 1 head of roasted garlic*
  • approx. 480 ml / 2 cups almond milk
  • 2 tbsp olive oil / vegan butter (optional)

Instructions:


  1. Place rinsed porcini mushrooms (they often have grit in them) in a small bowl and cover with (about 300 ml / 1½ cups) of boiling water to create a potent porcini stock. Set aside to let it infuse.
  2. Chop fresh mushrooms into thick slices or quarters. I did half and half.
  3. Heat up olive oil in a heavy-bottomed pot. Add diced onion and sauté on a low heat until slightly caramelised. Add chopped garlic and sauté for another 1-2 minutes.

Creamy Cashew Gravy

  • 1/2 cup cashews, soaked for 1 hour then drained
  • 2 cups water
  • 2 tablespoons nutritional yeast flakes
  • 1 teaspoon onion powder
  • 1 clove garlic, chopped
  • 1 tablespoon arrowroot powder, or cornstarch
  • 3 tablespoons Bragg's liquid aminos
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Italian seasoning
  • Pinch of Cayenne pepper

Instructions:


  1. Heat oil in a saucepan over medium-high heat. Add onion and cook until soft, about 3 minutes. Stir in garlic, thyme, parsley, paprika, and lentils to coat.
  2. Add water and bring to boil over medium heat. Reduce heat to simmer and cover the pot. Cook until lentils are tender and water has completely evaporated about 30 minutes. (Make sure lentils are dry and not soggy)

hoisin & honey-glazed chipolatas




We’re right in the middle of British Sausage Week, celebrating the true versatility of all things sausage. There are staggeringly over 500 British varieties available on the British market manufactured by skilled butchers and producers. Sausages can be enjoyed for breakfast, lunch and dinner simply baked or fried, served with mash or in a casserole, just to name a few.

Quite honestly, I’m struggling to keep a straight face trying to write about sausages. Perhaps it’s a reflection of what swishes about in my filthy mind but whatever I write and you read would most likely be filled with innuendo. Remember when people took excerpts out of Harry Potter books and replaced “wand” with “wang”? Here goes.

Ingredients

  • 60ml (4 tbsp) runny honey
  • 90ml (6 tbsp) hoisin sauce
  • 5ml (1 tsp) sesame seeds
  • 900g (2 lb) good-quality chipolatas


Instructions

  1. Preheat the oven to 200°C/fan 180°C /400°F/gas mark 6.
  2. Place honey, hoisin sauce and sesame seeds in a large shallow bowl and mix to combine.
