Black Bean Breakfast Burrito Recipe

This Healthy Black Bean Breakfast Burrito Recipe features a hearty bean & hash brown filling with scrambled eggs, cheese, avocado and salsa rolled into whole wheat tortillas. This is a great healthy breakfast idea that can also be made ahead.


Ingredients

  • 1 Tbsp (15 mL) extra virgin olive oil, divided
  • 1 onion finely diced
  • 1 medium red potato coarsely grated
  • 14 oz (400 g) can no-salt-added black beans, drained
  • 1/2 cup (125 mL) salsa
  • 2 tsp (10 mL) chili powder
  • 4 large eggs
  • 4 whole grain tortillas 10 inches/25 cm each
  • 1/2 cup (125 mL) shredded cheddar or Monterey Jack cheese
  • 1 ripe avocado sliced
  • 1/4 cup (60 mL) chopped fresh cilantro, for garnish (optional)
  • Sour cream and extra salsa for serving (optional)

Instructions

  1. Heat 2 tsp (10 mL) oil in a skillet over medium heat. Cook the onion and potato for 5 minutes, until they are soft and start to turn golden brown.
  2. Add the beans, salsa and chili powder to the mix and cook for 3–5 minutes. Slightly mash part of the beans with a fork and cook until heated through. Then transfer everything to a bowl and set.
  3. In a medium-sized bowl, whisk together the eggs. Heat the remaining 1 tsp (5 mL) oil in the skillet. Add the whisked eggs and don't stir until they start to set at the bottom (30 seconds). Then stir the eggs carefully with a spatula to scramble them. Add scrambled eggs to the bean mixture.

LOW CARB BIG MAC BITES

These Low Carb Big Mac Bites are a keto recipe for mini bunless burgers that make a great low carb appetizer or game day food that everyone will love!

Ingredients
  • 1.5 pounds Ground beef
  • ¼ cup Onion finely diced
  • 1 teaspoon Salt
  • 4 slices American Cheese
  • 16 slices Dill Pickle
  • Lettuce
Secret Sauce
  • 1/2 cup Mayonnaise
  • 4 tablespoon Dill pickle relish
  • 2 tablespoon Yellow mustard
  • 1 teaspoon White wine vinegar
  • 1 teaspoon Paprika
  • 1 teaspoon Onion powder
  • 1 teaspoon Garlic powder


Instructions
  1. Preheat oven to 400 degrees F.
  2. In a large bowl combine ground beef, onions, and salt. Mix until thoroughly combined.
  3. Roll the beef into 1.5 ounce balls. Press each one down slightly to flatten it to make a mini burger patty and place it on a lined baking sheet.
  4. Bake at 400 degrees F for 15 minutes or until cooked through.

Super Easy Puff Pastry Cheese Twists

These super easy puff pastry cheese twists make for the perfect snack or treat. They are also fantastic for lunch boxes as most kids will love them. These aren’t just great as lunch, but they’re even great as platter food or as a side dish to another meal.

These twists come out to be jam-packed full of flavor and have a very satisfying crunch. They’re a super easy dish and should only take you a maximum of 10 minutes to throw them together and get them in the oven. This will, of course, vary depending on how many you’re making.


I love having these with some nice dips. My personal favorites would be to have this with some spring onion or French onion dip. If you’re really feeling a bit experimental, you can even, try it with a corn relish dip but for me, it didn’t work as well.

Once cooked these will refrigerate nicely and should keep for up to about a week before you should look at discarding them.

Ingredients:
  • 1 Sheet of puff pastry
  • 1/3 Cup shredded cheese
  • ¼ Cup parmesan
  • 2 tsp. garlic, crushed
  • 1 tsp. oregano
  • 1 large egg beaten
  • ½ tsp salt

 Instructions:

  1. Preheat an oven to 220°C (430°F)
  2. Mix together the shredded cheese, grated parmesan, garlic & oregano.
  3. Using a pastry brush, brush the beaten egg across puff pastry.
  4. Place the cheese mix over ½ of the sheet of the pastry.
  5. Fold the puff pastry in half and brush with some beaten egg.
  6. Place the rest of the cheese mix over the other half.
  7. Cut the pastry into 1 cm (1/2 inch) wide strips.

HAM & CHEESE PRETZEL BITES

I had been stalking this particular recipe on Pinterest for quite some time (source: penniesonaplatter.com). We had some people over a while back, so it was the perfect opportunity to finally make these cute little bites! I had never made soft pretzels before, but I do have deliciously wonderful memories of them.

Back in my poor, single years (as opposed to my current poor, married years, ha), I was a waitron at Timberwolves games. Isn't that a funny word? Waitron? Anyhow, before the madness began each night, we had the option to eat either a free hot dog or a free soft pretzel. I usually opted for the pretzel, along with a container of warm, gooey cheese for dipping. I never got tired of those things.



I don't think I have bitten into a soft pretzel since my waitron days, which seems like a different lifetime. So when I bit into these, my tastebuds did cartwheels! Reunited with the beloved soft pretzel!

Ingredients:
  • 2 tablespoons packed brown sugar
  • 1 cup warm milk (110-115 degrees F)
  • 2 1/2 to 3 cups flour
  • 1 package (1/4 oz) instant dry yeast
  • 1/2 cup finely chopped ham
  • 1/2 cup mozzarella cheese, shredded
  • 6 cups water
  • 4 teaspoons baking soda
  • 4 tablespoons unsalted butter, melted
  • 1-2 tablespoons coarse kosher salt

Instructions:
  1. In a small bowl, stir together the brown sugar and warm milk until dissolved. In a large bowl, combine 2 ½ cups flour, the milk mixture and the yeast. Stir until a soft dough forms. Add the remaining flour as needed. Turn the dough out onto a lightly floured surface and gently knead a few times, forming a smooth ball.
  2. Brush the inside of a large clean bowl with olive oil. Transfer the dough to the bowl and cover tightly with plastic wrap. Allow to rise in a warm, draft-free area for about 2 hours, until dough has doubled in size and bubbles appear on the surface.

HOMEMADE PRETZEL BREAD

This Homemade Pretzel Bread is THE best bread you will ever eat in your life. I am totally not exaggerating either. It is one of my most requested creations and literally everyone who tries it asks for the recipe. It’s dense, soft, chewy, buttery, salty and oh-so-delicious.

I know making homemade bread can seem intimidating…but don’t you worry! We’ve created a video that shows you how to make this homemade pretzel bread step-by-step! And if there’s a recipe that’s worth conquering your kitchen fears for, this is definitely it.


Ritch absolutely adores this bread, and since it’s one of his favorite recipes of all time I thought I’d let him share his thoughts about it with you….



“My wife’s pretzel bread is one of the most amazing things that I have ever eaten. The only thing better than a loaf of this homemade pretzel bread is MORE loaves of pretzel bread! Sometimes when we have friends over to dinner— and Laura asks for meal ideas—I am torn as to whether or not to suggest this bread, simply because I can’t handle watching other people eat MY FAVORITE BREAD. 

(I smile, and politely pass the bowl, but secretly…I’m watching every movement…praying that they leave more for ME!) Fresh out of the oven, this bread beats any other meal that comes out of my home (IMHO), and a loaf of this stuff literally makes the “top 3 list” of things I would want with me on a deserted island. So basically, I HIGHLY recommend this recipe. -Husband” {<-he signed it that way, not me! LOL!}

There you have it folks, this Pretzel Bread is definitely husband approved! And I can attest to the fact that he will eat an entire loaf by himself if he doesn’t have to share. 😉

Ingredients
  • 2 ¼ tsp yeast
  • 1 cup warm water 105-110 degrees F
  • 2 TBS whole milk
  • 3 TBS brown sugar
  • 4 TBS butter melted
  • 1 tsp salt
  • 3 cups all-purpose flour
  • 4 quarts water
  • ½ cup baking soda
  • Kosher salt to taste
  • 2 TBS butter melted
  • 1-2 TBS coarse sea salt

Instructions
  1. Combine yeast, water, and brown sugar in the bowl of your standing mixer fitted with the dough hook. Let stand for 5 minutes (until foamy).
  2. While yeast is proofing…melt butter in a microwave-safe bowl. Mix in milk and set aside.
  3. Once yeast is proofed, add milk/butter to yeast mixture and mix on low speed with dough hook until just combined.
