Swiss Almond Cheeseball

  • 16 oz. cream cheese, room temperature
  • 6 oz. shredded Swiss cheese

  • 1 Tbsp. white wine
  • 2 tsp. worcestershire sauce
  • 3/4 cup sliced almonds, divided
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1 Tbsp. fresh rosemary, minced

Instructions:


  1. In a medium mixing bowl, combine cream cheese, Swiss cheese, cooked bacon, white wine, worcestershire sauce, garlic powder, and onion powder.

Strawberry Crunch Cake

Healthy Recipes - All you need to make this Strawberry Crunch Cake is a few ingredients and a food processor. I made a tangy strawberry frosting to spread between alternating layers of strawberry and vanilla cake (much love to homemade but I went with cake mixes this go around — this cake had enough elements to it without adding all THAT to the equation) and a creamy cream cheese frosting for the outer layer.


You’ll Need:


  • 2 (8 inch round) French vanilla cake layers, baked and cooled
  • 2 (8 inch round) strawberry cake layers, baked and cooled
  • Strawberry Crunch:
  • 12 Golden Oreo cookies
  • 12 shortbread cookies (I used Lorna Doone)
  • 3 Tablespoons salted butter, melted
  • 1 cup freeze dried strawberries
  • Strawberry frosting:
  • 1 cup salted butter, softened
  • 2 Tablespoons heavy cream
  • 1 cup frozen strawberries, thawed and pureed (alternatively, you could use fresh)
  • 4 cups powdered sugar
  • Cream cheese frosting:
  • 4 oz cream cheese, softened
  • 1/2 cup salted butter, softened
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar

Instructions:


  1. Prepare the strawberry crunch: In the bowl of your food processor, pulse Golden Oreos and shortbread cookies until they are in coarse crumbs. Add melted butter and pulse until combined. Addf freeze-dried strawberries and pulse until combined.
  2. Prepare strawberry frosting: In the bowl of your mixer, beat butter on medium speed until smooth. Add heavy cream and strawberry puree, mixing on medium-low and scraping the sides of the bowl as needed until combined. With the mixer on low, slowly add powdered sugar until combined. Increase mixer speed to high and beat for one minute.

Dry ingredients:

  • 2½ cups all-Purpose flour

Gluten Free Apple Cider Doughnuts

Funfetti White Chocolate Brownies

  • 200 grams (1 cup) good quality white chocolate
  • 170 grams (3/4 cup) unsalted butter

Trim Healthy Mama Lemon Bars (Sugar Free | Low Carb | Guten Free)

  • 1 cup blanched almond flour

Raspberry, Lime and Coconut Cheesecake

Healthy Recipes - A bright and fresh tasting raspberry, lime and coconut allergy-friendly vegan cheesecake on a raw seed and cacao base.


You’ll Need:

For the base:

  • 1 cup dates
  • 1 cup sunflower seeds
  • 1/2 cup dessicated coconut
  • 1/2 cup cacao powder or substitute cocoa
  • 1/4 cup buckwheat groats
  • 1/4 cup coconut oil melted if solid
  • 1 tbsp chia seeds
  • 1 tbsp sesame seeds

For the topping:

  • 2 cans lite coconut cream (totalling 800ml)
  • 2 cups raspberries (I used frozen, there's no need to defrost)
  • Zest and juice of one lime (approximately 2 tbsp lime juice)
  • 1/4 cup maple syrup or sweetener of your choice
  • 3 1/2 tsp powdered agar
  • 2 tbsp coconut oil

Instructions:


  1. Put all ingredients into a food processor and blend for 5-10 minutes, until the texture has small crumbs, and will hold together when pressed with your fingers. Some of the buckwheat will remain whole, and that's fine, they provide a welcome crunch.
  2. Tip the mixture into a 22cm diameter non-stick springform cake tin. It's not essential to line your tin as the topping and base will both release easily, but lining at least the base will make it a bit easier to lift the cheesecake out when it comes to serving time.

You’ll Need:

For the crust:

  • 1 cup dates
  • 1/3 cup sunflower seeds
  • 1/3 cup pumpkin seeds
  • 1/3 cup almonds
  • 2 tbsp coconut oil melted if solid

For the filling:

  • 500 g soft tofu drained
  • 1/2 cup raw cashews soaked for at least 4 hours (longer is fine) and drained
  • 1/3 cup fresh squeezed lime juice
  • 1/2 cup coconut oil melted if solid
  • 1/4 cup maple syrup
  • Vanilla - seeds scraped from 1 vanilla bean or 1 tsp vanilla paste, or 1 tsp natural vanilla extract

Instructions:

For the crust:

  1. Put all crust ingredients in to a food processor and pulse until you have a small crumb.
  2. Use your hands and the back of a spoon to press the crust mixture evenly into a tin. I used a 20cm pie tin with a removable base.
